  1. En un recipiente colocar la carne picada, agregar 1 cebolla cortada en brunoise, 1 diente de ajo finamente picado y el chimichurri. Mezclar bien hasta integrar todos los ingredientes, luego formar con las manos esferas del tamaño de una bola de ping-pong y reservar.
  2. En una cacerola con el tamaño adecuado ponemos a rehogar la cebolla restante y el 1/2 morrón junto con otro diente de ajo picado finamente, agregamos el pimentón, laurel y el provenzal. Cortamos en cubos los tomates y los llevamos a cocinar hasta formar una salsa. Agregamos agua suficiente para hidratar y rectificamos con sal y pimientas molidas. Una vez lograda la salsa colocamos las albóndigas dentro de la misma para cocinarlas.
  3. En otro recipiente preparar un arroz casi neutro, blanco (si te gusta podes usar el arroz parboil). Colocar el arroz con una cda de sal y el diente de ajo sobrante partido al medio. Agregar agua hasta 2 dedos por encima del nivel de arroz, tapar y cocinar a fuego medio de 15 a 20 min. dependiendo del tipo de arroz que se emplee
