- Ya que se vayan a preparar las albóndigas, le ponemos el huevo crudo a la carne y añadimos sal, revolvemos muy bien y empezamos a hacer las albóndigas
- Para el guiso:
- Molemos 2 pimientas, 1 clavo, una pizca de orégano y un ajo, agregamos el chile ancho molemos, agregamos un pedazo de cebolla volvemos a moler y por último el tomate y molemos bien.
- En la olla donde se hará el caldo, primero añadimos un chorrito de aceite y guisamos todo lo molido en el paso anterior, ya bien guisado agregamos agua y probamos la sal
- Ya hirviendo agregamos las albóndigas y le ponemos un chorrito del vinagre de las alcaparras, cuando ya empiecen a cocerse añadimos las papas, probamos la sal, cocida la papa, apagamos, servimos con arroz y a disfrutar!
